
Thers's one thing that hotel owner Herbert Ebner and Alm-boss Daniel have in common, they both grew up on a farm and have a strong affiliation with traditional farming.
It's therefore logical that local natural products are used in the Alm cooking: meat from neighbouring organic farmers and milk and butter from Herbert's brother Wolfgang from Haslgut Farm.
Butter it up!
This summer we're rally going for it! We want to make certain products ourselves. Our Alm-boss Daniel will take you back to the origins of ghe mountain pasture hut or "alm". From start to finish, you can see how fresh milk from the family HAslgut farm is turned into the tasty golden spread we all know and love. When it comes to butter churns and pats Daniel is really in his element. So you can now look forward to an Austrian ploughman's lunch with traditionally made butter.
Smoked treat
Have you ever smoked fish?
No, well you can come and see how it's done at the Waldhof Alm. Fresh char or trout from Lake Fuschl come fresh from the rod into the smoking oven. Whereby it's really important to use the right kind of wood. Various herbs such as thyme, juniper berries and bay leaves give the smoke that characteristic fragrance. And as they say "proof is in the eating"!
